Can I make this topic into a scientific research paper.

I think I am going to enjoy writing my paper this term  I have chosen a topic that is near and dear to my heart.  I want to see if there is anything regarding genetically modified food and the celiac patient.  I have heard through celiac websites that there is talk of a genetically modified wheat that does not have the gluten in which attacks the villi in celiac patients.  How great would that be!  It would have all the nutrients that a celiac is often lacking with out the consequences of it hurting their intestines.  I do not know how argumentative I can make this topic other than the fact that perhaps some do not believe it can be done.  What is your opinion on this?
